Clearify format for date.parse remapper

Description

The date.parse remapper states Convert a string to a date using a given format. however, it is not clear what formats are allowed.

In the source code, it uses the parse or parseISO function from the date-fns library.

The parse function can parse a string into a date, however you need to pass a format that aligns with your input string, so Jan 12 2023 would be MMM dd yyyy. In case you pass an empty string, parseISO will be used instead and as the name suggests only works on ISO strings.

Requirements

• Must add reference to https://date-fns.org/docs/Getting-Started and tell the user to type in parse.
• Must add examples that explain what formats are allowed.
