What does this MR do and why?

fix: Clarifies Redis requirements for GitLab 16.8.2

We unintentionally removed Redis 6.0 support in 16.8.0 and 16.8.1 but restored support in 16.8.2. This updates the documentation to reflect that despite 6.0 being end-of-life.
