当前另一种消费趋势就是方便速食食品。因为同样具有省时省事的特点,而受到广大消费人群的喜爱。而现在市场上的方便食品参差不齐,种类繁多,并且绝大多数都添加了各种化学食品添加剂,导致口感不够醇厚,无鲜味又不健康,方便的同时并不能够提供健康美味。
发明内容
本发明秉承健康营养美味的理念,以“方便营养”为特色提供一种海鲜菇方便汤料及其制作方法,其以海鲜菇等为主要原料,所加调味料均为纯天然调料,采用真空冷冻干燥技术,最大程度地保证了原料营养不流失,复水效果美观,且用沸水冲泡1-3min后即可食用,方便快捷。
为实现上述目的,本发明采用如下技术方案:
一种海鲜菇方便汤料及其制作方法,其配方组分按重量份计包括:海鲜菇10~50份,蔬菜4~15份,鸡蛋10~25份,虾米0.5~3份,调味料0.1-2份;所述蔬菜包含叶类蔬菜和非叶类蔬菜。
所述叶类蔬菜包括菠菜、香菜、卷心菜、大白菜、上海青、生菜、芹菜、空心菜等中的任意一种或几种,所述非叶类蔬菜包括西红柿、山药、莲藕、芦笋、洋葱、苦瓜、南瓜、胡萝卜、黄瓜等中的任意一种或几种。
所述调味料为星虫胶原蛋白、柚子皮粉、鱼皮粉、灵芝孢子粉、食用盐、淀粉、食用玉米淀粉、白砂糖、鸡肉粉、猪肉粉、牛肉粉、鱼肉粉、蘑菇粉、小葱、大蒜、白胡椒粉、芝麻油等中的任意三种以上。
所述海鲜菇方便汤料的制作方法,包括原料预处理、干炒、煮制、分装冷却、真空冷冻干燥及包装的步骤。各步骤具体操作如下:
1)原料预处理:将新鲜海鲜菇切成宽0.3~0.6cm、长2~3cm的条状;将叶类蔬菜切成宽0.8~1.5cm、长1.8~2.5cm的矩形,非叶类蔬菜切丁,控制其横截面积为0.25~0.4cm2;
2)干炒:将步骤1)处理好的条状海鲜菇及叶类、非叶类蔬菜于热锅内加入适量食用油后进行不断翻炒,直至有香味扑鼻且已经炒熟;
3)煮制:将干炒后的海鲜菇、蔬菜与虾米按料液质量比2:1-10加水煮制1-3min,并在煮制过程中加入打散的鸡蛋及调味料混匀;
4)分装冷却:将煮好的汤分装在6cm×5cm×7cm的模具中,其装入高度为1.5cm,然后将其自然冷却至0-30℃;
5)真空冷冻干燥:先将物料中心温度降到-30℃,然后在0.5h内将物料温度升到60℃,并维持7h,再在1h内将物料温度降到48℃,并维持12h,最后在0.5h内将物料温度降至40℃,维持12h;冷阱温度维持为-35℃;
6)包装:采用真空包装机进行包装,内包装规格为4cm×6cm×8cm。

(1)本发明所得海鲜菇方便汤料打开包装,加入开水后1-3min后即可食用,方便快捷。
(2)本发明以天然健康无添加为宗旨,所有调味料均为天然调料,其中包含多种具有辅助降血糖功能原材料,这使所得产品能够具有辅助降血糖功能。
(3)本发明真空冷冻干燥过程中复杂参数的设定,可在有效去除水份的同时保持汤料原有风味,后续降温过程可使干燥后的方便汤料在室温条件下具有不易吸潮等优点,且其复水效果优良,在提供健康营养美味的同时,还能提供视觉上舒适的享受。

实施例1.
(1)原料预处理:将新鲜海鲜菇切成宽0.3cm、长2cm的条状;将菠菜切成宽0.8cm、长1.8cm的矩形,西红柿切丁,其横截面积0.25cm2;
(2)干炒:将步骤(1)处理好的条状海鲜菇、矩形菠菜及西红柿丁于热锅内加入适量食用油后进行不断翻炒,直至有香味扑鼻且已经炒熟;
(3)煮制:将干炒后的海鲜菇20g、菠菜5g、西红柿5g与虾米0.5 g加入20.25g的水煮制1min,在煮制过程中加入10g打散的鸡蛋及0.5g天然无添加调味料(其组成为食用盐、食用玉米淀粉、白砂糖、鸡肉粉、鱼肉粉、蘑菇粉、小葱、大蒜、白胡椒粉、芝麻油);
(4)分装:将煮好的汤分装在(6cm×5cm×7cm)模具中,装入高度为1.5cm;
(5)冷却:采用常温自然冷却至温度为0-30℃;
(6)真空冷冻干燥:先将物料中心温度降到-30℃,然后在0.5h内升温到60℃,并维持7h,再在1h内降温到48℃,维持12h,最后在0.5h内降温至40℃,维持12h(冷阱温度维持-35℃);
(7)包装:用真空包装机进行包装,内包装规格为4cm×6cm×8cm。
食用时仅需打开包装,加入开水冲泡1-3min即可。根据滋味和气体、组织状态、色泽、咸淡进行感官评价,该配方下感官平均值为80.6。
实施例2.
(1)原料预处理:将新鲜海鲜菇切成宽0.4cm、长1.5cm的条状;将卷心菜切成宽1cm、长2cm的矩形,山药切丁,其横截面积0.3cm2;
(2)干炒:将步骤(1)处理好的条状海鲜菇、矩形菠菜及西红柿丁于热锅内加入适量食用油后进行不断翻炒,直至有香味扑鼻且已经炒熟;
(3)煮制:将干炒后的海鲜菇30g、卷心菜6g、山药6g与虾米1 g加入87g的水煮制1min,在煮制过程中加入15g打散的鸡蛋及1g天然无添加调味料(其组成为食用盐、食用玉米淀粉、鸡肉粉、鱼肉粉、蘑菇粉、小葱、大蒜、白胡椒粉、芝麻油);
(4)分装:将煮好的汤分装在(6cm×5cm×7cm)模具中,装入高度为1.5cm;
(5)冷却:采用常温自然冷却至温度为0-30℃;
(6)真空冷冻干燥:先将物料中心温度降到-30℃,然后在0.5h内升温到60℃,并维持7h,再在1h内降温到48℃,维持12h,最后在0.5h内降温至40℃,维持12h(冷阱温度维持-35℃);
(7)包装:用真空包装机进行包装,内包装规格为4cm×6cm×8cm。

4)分装冷却:将煮好的汤分装在6cm×5cm×7cm的模具中,其装入高度为1.5cm,然后将其自然冷却至0-30℃;
5)真空冷冻干燥:先将物料中心温度降到-30℃,然后在0.5h内将物料温度升到60℃,并维持7h,再在1h内将物料温度降到48℃,并维持12h,最后在0.5h内将物料温度降至40℃,维持12h;
6)包装:采用真空包装机进行包装,内包装规格为4cm×6cm×8cm。
