ガラナパウダーもしくはその抽出液を混合する豆腐、お茶(緑茶、ウーロン茶等)、混合発酵するヨーグルト、チーズ、紅茶(発酵茶)、乳酸飲料、醤油、みそ、酒類(日本酒、焼酎、ビール、ワイン等)、納豆、漬物、又、そのものを発酵し混合した麺類(そば、うどん等)、菓子類(クッキー、ケーキ、プリン、コーヒーゼリー、小倉羊羹、キャラメル、バニラアイスクリーム等)、スープ、お茶(緑茶、ウーロン茶等)、調味料等に老人のアルツハイマー型痴呆症予防食品としてカテキン、エピカテキンを利用した例はない。ガラナの成分であるカテキンには、アルツハイマー病の原因とされる物質であるベーターアミロイドによる神経細胞の死滅を防ぐ効果があることを鈴鹿医療科学大学大学院の鈴木郁功教授らの研究グループが突き止めた。ネズミからとった神経細胞を培養し、一方にはベーターたんぱくとカテキンを与え観察した。その結果、ベーターたんぱくだけで処理した細胞は約4割が死滅し、カテキンも加えた細胞はほとんど死ななかった。又、カテキンの効能についての他の学説は以下のとおりである。脳虚血疾患やアルツハイマー病で起こる神経変性は、ミトコンドリアの機能低下やカスパーゼの活性化を経由した神経細胞のアポトーシスによる。アポトーシスを誘導するこれらの現象前に、prostateapotosis rsponse−4(Par−4)という蛋白質が誘導された。また、β−アミロイドペプチドの添加によっても誘導された。Par−4は栄養因子の除去によるアポトーシスにおいても誘導されるが、このアポトーシスは抗酸化物質によって抑制された。茶及びガラナのカテキンはβ−アミロイドペプチド毒性を抑制した。β−アミロイドペプチドは活性酸素を産生させたが、カテキンは活性酸素産生を完全に抑制した。β−アミロイドペプチドのうち、あるフラグメント(Aβ25−35)が海馬神経細胞に毒性を示した。この毒性の抑制物質を検索した結果、生薬ガラナ抽出物のカテキンが強く抑制した。カテキンと以前からβ−アミロイドペプチド毒性抑制物質とされているビタミンEの抑制機構を検討した。その結果、両者はβ−アミロイドによる酸素ラジカル産生過程のいずれかを抑制していた。 ガラナは、全体的な老化の進行の防止にも著しい効果を発揮する。心臓の活動を活発化させ、老化した器官に起こりやすいうっ血を防止する。
