(イ)及び(ロ)の方法は、茹で揚げ脱水されたものを
冷凍保存後、再度油揚げするため揚げ過ぎとな
り、バリバリとなつたり褐色になつたりして新鮮
さが失われる。また衣の澱粉が冷凍保存中に老化
して好ましくない。二度揚げを無くし、オーブン
等で加熱する方法もあるがやはり食感の点で好ま
