Abstract
Selon cette invention, lors du parage de la viande on sépare les composants les plus grossiers du tissu conjonctif, tous les autres types dudit tissu, y compris les pellicules, les structures regroupant les cellules des muscles en faisceaux ainsi que les vaisseaux de taille importante, étant captés par un séparateur de viande hachée. La partie supérieure de l'entonnoir, montée en dehors du corps du hachoir à viande, est faite rotative. La base de l'entonnoir comporte des rainures hélicoïdales. Le séparateur de viande hachée, muni de deux tubes de déchargement, comprend une grille de coupe et de séparation et un couteau à un tranchant avec des enfoncements dans les pales, qui sont disposés dans une chambre à écoulement direct.
