Abstract

Cette invention concerne un procédé de fabrication de crèmes glacées maison sous emballage étanche, qui comprend les opérations suivantes : chauffage d'un mélange pour crème glacée maison à la température de pasteurisation; simultanément, refroidissement et fouettage du mélange pasteurisé ; et transfert direct du mélange pasteurisé dans une machine de conditionnement en lots/emballage.
