Claims (10)
- 식용 계면활성제의 중간상의 벌크영역과 80중량% 이하의 식용 오일을 함유하는 완성식품으로서, 상기 중간상은 연속상이며 또는 80중량% 이상의 물을 함유하는 것을 특징으로 하는 완성식품.
- 제1항에 있어서, 1㎛-1,000㎛의 입자크기를 가지는 중간상의 별개영역을 함유하는 완성식품.
- 제1항에 있어서, 5용량% 이상의 중간상을 함유하는 완성식품.
- 제1항에 있어서, 0.1-30용량%의 식용 계면활성제를 함유하는 완성식품.
- 제1항에 있어서, 0.1-30용량%의 생중합체를 함유하는 완성식품.
- 제1항에 있어서, 식용 계면활성제는 부분 글리세라이드, 바람직하게는 모노글리세라이드를 함유하는 완성식품.
- 제1항에 있어서, 0.1-30용량%의 식용 비이온 계면활성제와 0.005-10중량%의 식용 이온 계면활성제를 함유하는 완성식품.
- 제1항에 있어서, 드레싱, 마요네즈, 스프레드, 휘퍼블 제품, 아이스크림, 냉동 디저트, 치즈, 소스 및 액제 유제품으로 이루어진 군으로부터 선택되는 제품인 완성식품.
- 완성식품에 있어서 지방 대체물로서의 식용 계면활성제의 중간상을 사용하는 방법.
- 제1항에 따른 완성식품의 제조방법으로서, 물의 존재하에 식용 계면활성제를 계의 크라프트 온도보다 높은 온도로 가열시키는 단계를 포함하는 것을 특징으로 하는 제조방법.
